Crispy Fried Fish
Previous weekly challenge
Ingredients
- 4 fish fillets
- ½ cup flour
- 1 tsp paprika
- ½ tsp garlic powder (or 2 crushed garlic cloves)
- ½ tsp black pepper
- 1 tsp salt
- ½ tsp curry powder (optional)
- Juice of ½ lemon
- Cooking oil for frying
Method
- Works well with tilapia, hake, pollock or other white fish. Great with rice, potatoes, or chips.
- Season the fish: Pat the fillets dry. Sprinkle with salt, pepper, paprika, garlic and lemon juice. Leave for about 10–15 minutes.
- Coat: Put the flour on a plate and mix in a little paprika, salt and pepper. Lightly coat each fillet and shake off excess flour.
- Heat the oil: Add enough oil to cover the bottom of a frying pan generously. Heat over medium-high heat.
- Fry: Add the fish without overcrowding the pan. Fry for about 3–5 minutes per side, depending on thickness, until golden and cooked through.
- Drain: Transfer to kitchen paper and let the excess oil drain.
- 🍅 Quick tomato & onion sauce
- Since this goes especially well with rice, fry 1 chopped onion until soft, add 2 chopped tomatoes, a little salt, paprika and black pepper, then simmer for 8–10 minutes. Spoon it alongside or over the fish.
